Alaska Dungeness Crab Simmered with Rich Soup

Preparation: 10 min Cooking: 35 min

Ingredients:

1 Alaskan Dungeness Crab, 100 Bamboo shoots
50g Ham slices, 2 Chinese green onion segments
Some Ginger, 45 ml Chinese wine, ½ts Salt 1/2
1L Water: 1000 ml

Directions:

1.  Wash Alaska Dungeness crab and cut into small pieces. Cut bamboo shoots into    5cm-long segments.
2.  Use a clay pot and put in all ingredients.
3.  Heat on high until boiling then simmer for 30 minutes.

 
 

Alaska Salmon with Pineapple

Preparation: 20 min Cooking: 10 min

Ingredients:

500g Salmon, 200g Pineapple, Some Chopped scallion
Some Chopped ginger, Some Chopped garlic
45ml Tomato sauce, 90g Sugar, Some Vinegar
Some Salt, 45ml Mixed water and starch

Directions:

1.  Slice salmon into pieces and dip them into starch.  Peel pineapples and slice them into half-round pieces.
2.  Mix tomato sauce, sugar, vinegar, salt, water/starch.  Heat until sauce like.
3.  Heat some oil in a wok or deep sauté pan when hot add salmon and fry until crisp on the outside.  Remove salmon and pour off excess oil.
4.  With a little oil left in the pan sauté the chopped scallion, ginger and garlic.  Then add salmon and seasoning sauce. Bring to a boil and pour in a little sesame oil.  Then serve with pineapple placed around the dish.

 
 
Alaska Salmon Slices with Chopped Garlic

Preparation: 10 minutes Cooking: 10 minutes

Ingredients:

Alaska Salmon: 200g, Pepper: One piece, Chopped scallion: Some, Chopped ginger: Some, Chopped garlic: Some, Black Pepper: Some, Chinese Wine: 2 tea spoons (10 ml), Sugar: Some, Salt: Some, Mixed Water and starch: 2 tea spoons (2ml), Sesame oil: 1/3 tea spoon (2g)

Directions:

1.  Wash Alaskan salmon and slice into pieces. Chop up hot pepper.
2.  Mix black pepper, cooking wine, sugar, salt with water/starch.  Mix into a seasoning sauce.
3.  On medium, heat oil in a wok or deep sauté pan.  Fry salmon until crisp on the outside while still tender on the inside. Take the salmon out and place on paper towel to absorb oil.
4.  Using the left over oil, add the chopped scallion, ginger and garlic and quickly sauté them. Then add the salmon, hot pepper and seasoning sauce. Stir-fry them. Finally pour in the sesame oil and serve hot.

 
 

Fried Alaska salmon with bamboo shoots

Preparation: 15 min Cooking: 5 min

Ingredients:

Alaska salmon: 500g, Bamboo shoot: 50g, Shredded , scallion: 5g, Shredded ginger: 5g, Pepper: 1/3 tea spoon, , Salt: 1/3 tea spoon , Chinese wine : 2 tea spoons(10 ml), Starch : 1/3 tea spoon(2g), Oil: 1 spoon (15ml), Sesame oil: 1 spoon (5ml)

Directions:

1.  Clean and shred Alaskan salmon, then boil it briefly. Take it out, drain the water and put it aside. Shred the bamboo shoot.
2.  Make a seasoning sauce by mixing pepper, salt, Chinese wine and starch.
3.  Quickly fry the shredded scallion and ginger in heated oil. Then add Alaskan salmon, shredded bamboo shoot and seasoning sauce into the pan and stir-fry.  Lastly, add sesame oil and serve.
